4 लोगों के लिए खिचड़ी बनाने का सामान
चावल- 1 कप
मूंग दाल-1/2 कप (धुली हुई)
घी या मक्खन- 2-3 चम्मच
सब्जियां- गाजर, मटर, बीन्स, आलू (बारीक कटी हुई)
हींग- 1 चुटकी
जीरा- 1/2 चम्मच
हल्दी पाउडर- 1/2 चम्मच
नमक- स्वादानुसार
बनाने की विधि
सही तरह से खिचड़ी बनाने के लिए आपको सबसे पहले दाल-चावल तैयार करने हैं। इसके लिए चावल और दाल को धोकर 15-20 मिनट के लिए भिगो दें। जब तक दाल-चावल भीगे हुए हैं, तब तक सब्जियों को बारीक काटकर तैयार कर लें।
अब एक प्रेशर कुकर में घी गर्म करें। इसमें हींग और जीरा डालकर हल्का भून लें। चाहें तो 1-2 कटी हरी मिर्च डाल सकते हैं। इसमें बारीक कटी सब्जियां डालें और 2-3 मिनट तक भूनें। हल्दी पाउडर और थोड़ा नमक डालें।
भिगोए हुए चावल और दाल को कुकर में डालें और 2-3 मिनट तक हल्का भूनें। इसके बाद से कुकर में से खुशबू आने लगेगी। अब इसमें 4-5 कप पानी डालें।
अगर ज्यादा नरम खिचड़ी चाहिए तो पानी थोड़ा और बढ़ाएं। साथ ही में स्वादानुसार नमक डालें। प्रेशर कुकर का ढक्कन बंद करें और 2-3 सीटी आने तक पकाएं। सीटी खत्म होने के बाद कुकर का प्रेशर निकलने दें। चाहें तो आखिर में इसके ऊपर हरा धनिया से सजाएं। खिचड़ी तैयार है। इसे घी डालकर सर्व करें।
